We have been watching the slackening of wine regulation with eagles eyes. So many previously unthinkable methods and additves are now permitted. And these things don´t even need to be named on the label! We want none of all that. Nor do true wine lovers - who would?

Our approach to winemaking is completely different: simply grapes, attention, time, temperature, gravity, native yeasts and bacteria, everything done by hand, the natural layout of our cellar and a deep sense of trust. We let nature make the wines, we help them develope their own talents and direction, and settle in their own personality.

Winemaking hold many mysteries, but fermentation is the greatest mystery of all. In these crazy times when it seems every problem can be overcome using technology, our challenge is to watch with humility while everything is resolved by gentle force of nature.
